OS X can draw the screen using different technologies. One of these, arbitrarily named Cocoa, is clearer than the others. Major Cocoa applications include Safari, Create, Keynote, Nisus Writer, Chartsmith, OmniOutliner, OmniGraffle, and Mail.
For best legibility try these fonts and set the General panel of System Preferences like this:
